Make this simple flatbread to pair with delicious dips such as Burta and Chutni Nahna.

Serves: 4 people                                                         Cook time: 1 hour 45 minutes (including resting time)

Ingredients

225g chapati flour

150ml water

1/2 tbs salt

Method

Sift the flour with salt into a bowl and slowly add water, mixing with the hand to form a soft dough.

Knead for 7-10 minutes until the dough is smooth. Cover with a damp cloth and set aside for an hour. Why not make the Burta or Chutni Nahna while you are waiting?

Heat a large cast iron pan over a medium heat. 

Divide the dough into 8 and form into round balls. Roll out each ball, using a little extra flour, until it is quite thin and about 8-20cm in diameter.

Pick up each chapati in turn between two hands and pat it gently to shake off excess flour, then slap it on the hot pan. Cook for about a minute then turn over to other side and cook for another minute. As you cook press down the edges gently with tongs, so as to cook evenly. The chapatis should puff up.

Chapatis are best eaten hot and fresh!
